- 1 ½ oz unsweetened cranberry juice
- 1 ½ oz pomegranate juice
- 2 oz pomegranate ginger vodka
- 4ish oz ginger beer
- 1 pomegranate full of seeds
- 1 knob fresh ginger*
- 1 lime to garnish
Ok, if you’re going this route first you’re going to have to infuse your vodka, so take a pomegranate, and about 4 TB of fresh, chopped ginger and let it infuse overnight. It won’t take too long for these ingredients. Smash the seeds and press down with a pestle as you strain it to get all the juices out.
To make the cocktail, just stir together the juices and vodka in a pint glass, or large chalice, add ice and then add ginger beer to taste, making it weaker, or stronger, as you like.
Garnish with pomegranate seeds and lime wheels.
*make a ginger simple syrup if you want it sweeter, just boil equal parts sugar and water with your ginger (about 1 ½ TB ginger to a cup of sugar water). I don’t love overly sweet things, but unsweetened cranberry juice is craaaazy sour/bitter.
